Returning to the ancient land where is popular for the place of hundred crafts in the capital Hanoi, we had an opportunity to talk with Mr. Nguyen Xuan Diep, 94 years old, Cao Vien commune, Hanoi city, to listen to him talk about the "legend" of Bach Huong Xuan sugared or salted fruits of the traditional craft villages.

Mr. Nguyen Xuan Diep who told about the difficult period when he was looking for making a livelihood, he realized that his hometown where had alot of rustic fruits that needed to be processed, this dish is both a long time and tasty snacks for urban people

His thinking is conducting, he studied everywhere from remote provinces to artisans in the heart of the acient town and found rich, abundant, hygienic sources of raw materials to bring back to process.

Collecting the quintessence of plenty of delicious fruits to put sour, spicy, salty, sweet flavors... into each sugared or salted fruits, he successfully found his own recipe, meeting the demanding culinary needs of Hanoi people after many failures. Thanks to that, the amount of his products was consumed as soon as they were produced, from retails to wholesales and stores on the street.

After nearly a hundred years, he still continued to make sugared or salted fruits and achieved alot of success to promote the family's traditional craft and passed down for descendants.

From simple, familiar sugared or salted fruits that had a brand and gained the 4-star OCOP product standards, be unique products in Hanoi which achieved this certification.

Ms. Nguyen Thi Le, Mr. Diep's niece who is current owner of Bach Huong Xuan store. She said that growing up and witnessing hardships of profession, there was a time when she changed her profession. But as a predestined fate, she still remained the familiar flavors of her hometown , associated with her childhood, and continued the journey of developing the traditional sugared or salted fruits craft villages.

 

According to Ms. Le, making delicious sugared or salted fruits, selection of raw materials that are very important, it is necessary to choose right harvest time to get the best quality.

Like Vietnamese dracontomelon in summer, it is necessary to choose the early season dracontomelons to make this jam, when the seeds are not hard enough. Then bring them home to process and wash them, to soak up the spices and remain a fragrant smell, they will use a spike board to ignite the fruits. The steps of making this jam which are handmade products to create the best flavor and follow traditional recipe which is the most standard.
